Mashed Potatoes with Black Trumpets

Ingredients


-3 lbs of potatoes, I like Yukon gold or mixed baby potatoes for this recipe.

-Water

-Salt

-Butter

-Heavy Cream

-A handful of fresh black trumpets mushrooms, Minced.


In a frying pan melt the butter and infuse it with the black trumpets. This should be done on a low heat for at least an hour or two. The mushrooms will be fully cooked abnd very dark when it is done and ready.


In a large pot boil enough water to allow the potatoes to float in the pot.


Boil the potatoes until you can easily split them in half with a fork; about 10 minutes on a hard boil.


Drain potatoes and return to the pot.


Add in salt, black pepper, trumpet infused butter, and cream. Mash with a spoon until a beautiful creamy texture is achieved. I think at least a 1/3c of cream is nice but you can use more or less depending on your preference.
