Wild Blue Fish with Juniper and Sumac

Ingredients:


2-3lbs of bluefish steaks

1/4c Mayonnaise

Salt

Black Pepper

1/2 t Sumac

About a 1/4c Gin

1 t Sweet Fern

3 leaves Northern Bay


I used a cast iron fish pan for this recipe but you can use a glass baking dish or regular frying pan if you don't have one. I recently got this pan from my aunt and was excited to use it. It even came with it's own trivet and I found that very exciting.


Season the bluefish steaks with salt and black pepper on both sides and then place them in the baking dish.


Add in enough gin to cover the bottom quarter of the fish.


Spread mayo liberally over the top of the fish. (This will keep it from drying out on top)


Season the whole dish with sumac, sweet fern and Northern bay.


Let marinate until you are ready to cook.(ideally at least 2 to 6 hours but overnight works too)


Bake at 425 degrees F, until the fish is just done all the way through. About 20 to 25 minutes depending on your oven.
