Cattail Pollen Corn Muffins

Cattail Pollen Corn Muffins With Crispy Morels.

Here is my favorite recipe for corn muffins. Corn Muffins are a really great bake for the summertime as they are quick and easy and require very little cleaning. They also make a great vehicle for pollen. The recipe below is in imperial and metric.


Ingredients:

Yellow corn meal-1/2c-64g

Plain Flour-1/2c plus 1T-75g

Sugar/Honey/Maple syrup-2T plus 2t-33g

Baking Powder 1t-4.6g

Salt 1/2t-3.3g

1 large egg

Sour Cream-2/3c-161g

Milk-2T-28g

Cattail Pollen 2T-about 3g depending on the moisture of the pollen


Grease your muffin tin well, or they will stick, and then just barely combine the ingredients above. Fill the muffin cups evenly and bake for about 20 mins at 375F or until a toothpick comes out clean.


Eat warm with butter and salt. Fried morel mushroom topping optional. 


Consuming pollen is really good for mens health and seasonal allergies. It also added a beautiful sunshine butter yellow color to baked goods. Happy foraging!
